Carrot Cake Recipe INGREDIENTS 2 cups all-purpose flour 1 cup of sugar 1/2 cup brown sugar 2 tsp ground cinnamon 1 tsp ground nutmeg 2 tsp baking soda 1 tsp salt 1/2 cup raisins 1/2 cup egg substitute 2 egg whites 2 1/2 cups shredded carrots 1/2 cup applesauce 1/3 cup canola oil 12 oz fat-free cream cheese 3 tbsp hot water 1 7 oz jar of marshmallow  crème 1 tsp vanilla extract DIRECTIONS Preheat the oven to 350ºF. Spray 2 (9-inch) round cake pans with non-fat cooking spray (I used butter flavored Pam), line the bottoms with parchment or wax paper, and spray the paper with the nonstick spray. Shrimp, Sausage, And Turkey Creole Medley

Ingredients

Ø  1 lb of medium or large shrimp (peeled and deveined)

Ø  6 oz of pre-cooked smoked sausage, chopped (choose your favorite)

Ø  3/4 cup diced red bell pepper

Ø  3/4 cup diced green bell pepper

Ø  1/2 of a medium yellow onion, diced

Ø  1/4 cup chicken stock

Ø  1 zucchini, chopped

Ø  2 garlic cloves, diced

Ø  Salt & pepper to taste

Ø  Pinch of red pepper flakes

Ø  2 tsp Old Bay Seasoning

Ø  Olive oil or coconut oil

Ø  Optional garnish: chopped parsley



Instructions

  • Heat a large skillet over medium-high heat with some olive oil or coconut oil
  • Season shrimp with Old Bay Seasoning
  • Cook shrimp about 3-4 minutes until opaque – remove and set aside
  • Cook onions and bell peppers in skillet with 2 Tbsp of olive oil or coconut oil for about 2 minutes
  • Add sausage and zucchini to the skillet, cook another 2 minutes
  • Put cooked shrimp back into skillet along with the garlic, and cook everything for about 1 minute
  • Pour chicken stock into pan and mix through to moisten everything
  • Add salt, ground pepper, and red pepper flakes to taste
  • Remove from heat, garnish with parsley and serve hot
